Asian Chicken Cranberry Salad 🥗🍗
Ingredients:
For the Salad:
2 cups cooked chicken breast, shredded or diced
4 cups mixed greens (spinach, arugula, or romaine)
1/2 cup dried cranberries
1/2 cup shredded carrots
1/2 cup sliced almonds
1/4 cup chopped green onions
1/2 cup mandarin orange segments
1/4 cup cilantro, chopped (optional)
For the Dressing:
1/4 cup rice vinegar
2 tbsp soy sauce
1 tbsp honey
1 tsp sesame oil
1/4 cup olive oil
1 tsp grated ginger
1 garlic clove, minced
Salt and pepper to taste
Instructions:
In a large bowl, combine mixed greens, shredded chicken, dried cranberries, carrots, almonds, green onions, mandarin oranges, and cilantro (if using).
In a small bowl, whisk together rice vinegar, soy sauce, honey, sesame oil, olive oil, ginger, garlic, salt, and pepper until well combined.
Drizzle the dressing over the salad and toss gently to coat.
Serve immediately and enjoy!
