Moroccan Chicken Tajine




Ingredients:


- Chicken pieces (thighs & drumsticks) 🍗

- Olive oil 🫒

- Onions, finely chopped 🧅

- Garlic cloves, minced 🧄

- Fresh ginger, grated 🌱

- Ground cumin, coriander, cinnamon, paprika, turmeric 🌶️

- Salt and pepper 🧂

- Chicken broth or water 💧

- Dried apricots or raisins 🍇

- Preserved lemons or lemon zest 🍋

- Green olives 🫒

- Fresh cilantro and parsley, chopped 🌿


Instructions:


1. **Brown Chicken:** In tajine/pot, brown chicken in olive oil. Remove and set aside.

2. **Sauté Aromatics:** Sauté onions, garlic, ginger.

3. **Add Spices:** Stir in spices, cook until fragrant.

4. **Combine:** Return chicken, add broth/water.

5. **Add Fruits:** Mix in apricots/raisins, lemon zest.

6. **Slow Cook:** Simmer covered for 40-50 mins.

7. **Finish:** Add olives, garnish with herbs.

8. **Serve:** Enjoy with couscous/rice/flatbread.
