Mexican Tortilla Casserole




Ingredients:

1 lb ground turkey

1 medium onion, chopped

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (15 oz) diced tomatoes, drained

1 can (4 oz) diced green chilies

1 packet taco seasoning

6 small flour tortillas, cut into quarters

2 cups shredded Mexican blend cheese

1/4 cup chopped cilantro (optional)

Instructions:

Preheat oven to 350°F (175°C).

In a large skillet, cook ground turkey and onion over medium heat until turkey is browned. Drain any excess fat.

Add black beans, corn, diced tomatoes, green chilies, and taco seasoning to the skillet. Stir well and simmer for 5 minutes.

In a greased baking dish, layer half of the tortilla quarters on the bottom.

Spread half of the turkey mixture over the tortillas.

Sprinkle one cup of cheese over the turkey mixture.

Repeat layers with remaining tortillas, turkey mixture, and cheese.

Bake for 20-25 minutes, or until cheese is melted and bubbly.

Garnish with chopped cilantro if desired.

Notes:

Substitute ground turkey with ground chicken if preferred.

Use low-sodium taco seasoning for a healthier option.
