Teriyaki Chicken Bowls with Crispy Brussels 🌟🍗🥦
Ingredients:
- 2 cups Brussels sprouts, halved
- 1 pound chicken breast, diced
- 1/4 cup teriyaki sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 cup cooked brown rice
- Salt and pepper to taste
- 2 green onions, sliced (for garnish)
- 1 teaspoon sesame seeds (for garnish)
Instructions:
1. Preheat your oven to 425°F (220°C). Grab a baking sheet, line it with parchment paper, and set it aside.
2. In a mixing bowl, toss the halved Brussels sprouts with olive oil, garlic powder, salt, and pepper until coated. Spread them evenly on the prepared baking sheet, and roast for about 20-25 minutes, or until they are crispy and golden brown.
3. While the Brussels sprouts are roasting, heat a skillet over medium-high heat. Add the diced chicken and season with salt and pepper. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken is cooked through and no longer pink.
4. Pour in the teriyaki sauce, reduce the heat to low, and allow the chicken to simmer in the sauce for about 2-3 minutes, letting the flavors meld together.
5. To assemble your bowls, start with a generous scoop of cooked brown rice at the bottom of each bowl. Top it with the teriyaki chicken and then pile on those crispy Brussels sprouts.
6. For the finishing touch, sprinkle sliced green onions and sesame seeds on top for extra crunch and flavor.
