Stuffed Salmon with Spinach and Cheese 🐟🧀
Ingredients:
For the Salmon:
- 4 salmon fillets (skinless)
- 1 tablespoon olive oil
- Salt and black pepper to taste
For the Filling:
- 2 cups fresh spinach, sautéed
- 1/2 cup cream cheese, softened
- 1/4 cup mozzarella cheese, shredded
- 1 garlic clove, minced
- Salt and pepper to taste
For the Sauce:
- 2 tablespoons butter
- 1 garlic clove, minced
- 1 cup heavy cream
- 1/4 cup Parmesan cheese, grated
- 1 teaspoon lemon juice
- Salt and black pepper to taste
Directions:
1. Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper.
2. In a bowl, mix sautéed spinach, cream cheese, mozzarella, minced garlic, salt, and pepper for the filling.
3. Cut a pocket into each salmon fillet and stuff with the spinach mixture. Place the stuffed fillets in the prepared baking dish.
4. Heat olive oil in a skillet and sear the salmon for 2-3 minutes per side, then transfer to the oven and bake for 10-12 minutes, or until cooked through.
5. In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute. Stir in heavy cream, Parmesan cheese, lemon juice, salt, and pepper. Simmer for 3-4 minutes until the sauce thickens slightly.
6. Pour the creamy sauce over the baked salmon and serve garnished with fresh parsley and lemon wedges.
