Ingredients:


4 large red bell peppers 🌶️

1 ½ cups cooked quinoa or rice 🍚

1 cup spinach, chopped 🌱

½ cup feta cheese, crumbled 🧀

1 tbsp olive oil 🫒

1 clove garlic, minced 🧄

1 tsp dried oregano 🌿

Salt and pepper to taste 🧂

Fresh parsley, chopped (for garnish) 🌿

Instructions:


Preheat the oven: Preheat your oven to 375°F (190°C). 🌟


Prepare the peppers: Slice the tops off the bell peppers and remove the seeds. Lightly drizzle the peppers with olive oil and place them in a baking dish. Set aside. 🌶️


Cook the filling: In a skillet, heat olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Stir in chopped spinach and cook for 2-3 minutes until wilted. 🧄🌱
