Seared Beef Cubes with Herb Sauce

**Seared Beef Cubes with Herb Sauce**

**Ingredients:**

- 1 lb beef tenderloin or sirloin, cut into 1-inch cubes

- 2 tablespoons olive oil

- Salt and freshly ground black pepper, to taste

- 1 teaspoon garlic powder

- 1 teaspoon onion powder

- 1 tablespoon fresh thyme or rosemary, finely chopped

- 1/4 cup fresh parsley, chopped (for garnish)

For the Herb Sauce:

- 1/4 cup olive oil

- 2 tablespoons balsamic vinegar

- 1 tablespoon Dijon mustard

- 1 teaspoon honey

- 1 clove garlic, minced

- Salt and freshly ground black pepper, to taste

**Instructions:**

1. **Prepare the Beef:**

   - Preheat a grill or grill pan over medium-high heat.

   - Pat the beef cubes dry with paper towels. This helps achieve a good sear.

   - Drizzle the olive oil over the beef and season with salt, pepper, garlic powder, onion powder, and fresh herbs. Toss to coat evenly.

2. **Grill the Beef:**

   - Place the beef cubes on the preheated grill. Grill for about 2-3 minutes on each side, ensuring they are cooked to your desired doneness and have distinct char marks. For medium-rare, the internal temperature should reach about 130°F (54°C).

   - Remove the beef cubes from the grill and let them rest for a few minutes.

3. **Prepare the Herb Sauce:**

   - In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, minced garlic, and season with salt and pepper.

   - Adjust the sweetness and acidity to taste.

4. **Serve the Beef:**

   - Arrange the seared beef cubes on a plate. Drizzle the herb sauce lightly around the beef, allowing it to pool slightly for visual appeal.

   - Garnish with freshly chopped parsley for a fresh pop of green.

5. **Serve and Enjoy:**

   - Serve immediately, enjoying the flavorful, juicy beef cubes paired with the aromatic, tangy sauce.

The perfectly seared beef cubes, with their rich seasoning and herb sauce, create a dish that’s not only mouthwatering in flavor but also visually stunning. The balance of the charred beef with the fresh, vibrant parsley and the glossy sauce adds to the overall inviting presentation.
