Ingredients:

🍗 For the Chicken Skewers:


2 lbs boneless, skinless chicken breast or thighs, cut into 1-inch cubes

2 tbsp olive oil

1 tbsp soy sauce

1 tbsp lime juice

1 tsp garlic powder

1 tsp ground cumin

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

Wooden skewers (soaked in water for 30 min)

🥜 For the Peanut Sauce:


½ cup peanut butter (creamy or chunky)

2 tbsp soy sauce

1 tbsp lime juice

1 tbsp honey (or brown sugar)

½ tsp garlic powder

½ tsp ginger powder (or fresh grated ginger)

¼ tsp red pepper flakes (optional, for heat)

¼ cup warm water (adjust for consistency)

Instructions:

1️⃣ Marinate the Chicken:


In a bowl, mix olive oil, soy sauce, lime juice, garlic powder, cumin, paprika, salt, and pepper.

Add chicken cubes, toss well, and marinate for at least 30 minutes (or overnight for best flavor).

2️⃣ Prepare the Peanut Sauce:


In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, garlic, ginger, and red pepper flakes.

Add warm water gradually, whisking until smooth and creamy. Adjust consistency as needed.

3️⃣ Assemble & Grill the Skewers:


Thread marinated chicken onto soaked skewers.

Preheat grill (or grill pan) to medium-high heat.

Grill skewers for 4-5 minutes per side, until nicely charred and cooked through (internal temp 165°F / 75°C).
