Golden Potato Muffins with Gooey Cheese Surprise


 

Ingredients:

4 medium-sized potatoes, peeled and grated

1 cup cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

1/2 cup milk

1 egg

1/4 cup butter, melted

1/2 cup flour

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh parsley for garnish (optional)

Directions:


Preheat your oven to 375°F (190°C) and grease a muffin tin or line with muffin liners.

In a large bowl, combine the grated potatoes, cheddar cheese, mozzarella cheese, milk, egg, melted butter, flour, garlic powder, onion powder, salt, and pepper.

Mix everything until well combined.

Spoon the mixture into each muffin tin, filling each cup about three-quarters full.

Bake for 20-25 minutes, or until the tops of the muffins are golden brown and crispy.

Let the muffins cool slightly before removing them from the tin.

Garnish with fresh parsley if desired and serve warm.
