EPIC Chunky Beef and Mushroom Pie

Ingredients:


500g beef chuck, cut into chunks

200g mushrooms, sliced

1 onion, diced

2 cloves garlic, minced

2 tbsp olive oil

2 tbsp butter

2 tbsp all-purpose flour

500ml beef broth

100ml red wine (optional)

1 tsp Worcestershire sauce

1 tsp dried thyme

1 tsp rosemary

Salt and pepper to taste

1 sheet puff pastry

1 egg (for egg wash)

1 tbsp fresh parsley, chopped (for garnish)

Instructions:


Prepare the Filling:

Heat olive oil and butter in a large skillet over medium heat. Brown the beef chunks in batches until all sides are nicely seared. Set aside.

In the same pan, sauté the onion and garlic until softened, about 5 minutes.

Add the sliced mushrooms and cook until softened and slightly browned.

Create the Sauce:

Sprinkle the flour over the beef and mushroom mixture, stirring well to coat.

Gradually pour in the beef broth while stirring, making sure there are no lumps. Add red wine (if using) and Worcestershire sauce. Stir in the thyme and rosemary, then simmer for 20-25 minutes, or until the sauce thickens. Season with salt and pepper to taste.

Assemble the Pie:

Preheat your oven to 200°C (390°F).

Roll out the puff pastry on a floured surface to fit your pie dish. Spoon the beef and mushroom mixture into the dish, then cover with the pastry, trimming any excess. Seal the edges by pressing down with a fork.

Make a few small slits in the top of the pastry to allow steam to escape. Brush with beaten egg for a golden finish.

Bake:

Bake in the preheated oven for 25-30 minutes, or until the pastry is golden and puffed up.

Serve:

Garnish with fresh parsley and serve hot.
