Cajun Cabbage Jambalaya


 


Ingredients:


1 lb ground beef or sausage (or a mix)


1 medium onion, diced


1 bell pepper, diced (green or red)


3 cloves garlic, minced


1 medium head of cabbage, chopped


1 (14.5 oz) can diced tomatoes


1 cup cooked white rice


1 cup chicken broth (or water)


1 teaspoon Cajun seasoning (adjust to taste)


½ teaspoon smoked paprika


½ teaspoon dried thyme


½ teaspoon salt (or to taste)


¼ teaspoon black pepper


¼ teaspoon cayenne pepper (optional, for extra heat)


2 tablespoons olive oil or butter


Instructions:


1. Cook the Meat:


In a large skillet or pot over medium-high heat, add the olive oil.


Brown the ground beef or sausage, breaking it up with a spatula.


Once fully cooked, drain any excess grease if necessary.


2. Sauté the Aromatics:


Add the diced onion and bell pepper to the skillet. Sauté for 3–4 minutes until softened.


Stir in the minced garlic and cook for another 30 seconds until fragrant.


3. Add the Cabbage and Seasonings:


Add the chopped cabbage to the skillet, stirring well to combine.


Sprinkle in the Cajun seasoning, smoked paprika, thyme, salt, black pepper, and cayenne pepper (if using).


Cook for about 5 minutes, stirring occasionally, until the cabbage starts to wilt.


4. Simmer:


Pour in the diced tomatoes (with their juices) and the chicken broth.


Stir everything together and bring to a gentle simmer.


Cover and let it cook for 15–20 minutes, stirring occasionally, until the cabbage is tender.


5. Add the Rice:


Stir in the cooked white rice and mix well until everything is evenly combined.


Let it cook for another 5 minutes to absorb the flavors.


6. Serve and Enjoy:


Taste and adjust the seasoning if needed.


Serve hot, garnished with fresh parsley or green onions if desired.
