Ingredients:
4 large russet potatoes
1 lb ground beef
1/2 cup cheddar cheese, shredded
1/2 cup mozzarella cheese, shredded
1/2 medium onion, finely chopped
2 cloves garlic, minced
1/2 cup breadcrumbs
1 egg
1 tablespoon olive oil
1 teaspoon paprika
Salt and pepper to taste
2 tablespoons fresh parsley, chopped (for garnish)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Directions:
Peel and boil the potatoes in salted water for about 15 minutes or until fork-tender. Drain and mash. Set aside to cool.
While the potatoes are cooling, heat olive oil in a skillet over medium heat. Add the onion and garlic and sauté until softened, about 3 minutes. Add the ground beef, season with paprika, onion powder, garlic powder, salt, and pepper, and cook until browned. Remove from heat and set aside to cool.
In a large mixing bowl, combine the mashed potatoes, egg, breadcrumbs, and both cheeses. Mix until well combined.
Take a small amount of the potato mixture and form a small patty. Spoon some of the beef mixture into the center and seal the edges, then gently shape into a cake. Repeat with the remaining ingredients.
Heat a skillet over medium heat and cook the potato cakes in batches for 3-4 minutes per side, or until golden brown and crispy.
Garnish with fresh parsley and serve hot.
