Savory Bacon, Cheese, and Green Bell Pepper Egg Muffins

Ingredients:


6 large eggs

1/4 cup heavy cream

1/2 cup cooked bacon, chopped

1/2 cup shredded cheddar cheese

1/4 cup green bell pepper, chopped

Salt and pepper to taste

1 tsp olive oil (for greasing the muffin tin)

Directions:


Preheat the oven to 375°F (190°C). Grease a muffin tin with olive oil or non-stick spray.

In a bowl, whisk together the eggs and heavy cream until well combined. Season with salt and pepper.

Add the chopped bacon, shredded cheddar cheese, and green bell pepper to the egg mixture. Stir to combine.

Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.

Bake for 18-20 minutes or until the muffins are puffed and golden on top, and a toothpick inserted comes out clean.

Let the muffins cool slightly before removing them from the tin. Serve warm or at room temperature.
