Ingredients:

  • 2 cups broccoli florets (fresh or frozen)
  • 2 cups mushrooms (sliced, any variety like button, cremini, or shiitake)
  • 1 tablespoon olive oil or vegetable oil
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon sesame oil (optional, for added flavor)
  • 2 cloves garlic (minced)
  • 1 teaspoon fresh ginger (minced or grated)
  • 1 tablespoon water or vegetable broth
  • 1 tablespoon sesame seeds (optional)
  • Salt and pepper to taste
  • Red pepper flakes (optional, for a bit of spice)
  • Green onions for garnish (optional)

Instructions:

  1. Prepare the vegetables: If you haven’t done so already, wash and cut the broccoli into florets and slice the mushrooms. Mince the garlic and ginger.
  2. Blanch the broccoli: Bring a small pot of water to a boil and add the broccoli florets. Cook for about 1-2 minutes, just until tender-crisp. Drain and set aside. (You can skip this step if using frozen broccoli.)
  3. Sauté the mushrooms: Heat the olive oil in a large skillet or wok over medium-high heat. Add the sliced mushrooms and sauté for 3-5 minutes, until they start to soften and release their moisture.

  6. Add water or broth: If needed, splash in a bit of water or vegetable broth to help create some steam and to prevent sticking. Cook for another minute.
