 Potato and Bacon Meatloaf



Ingredients:


500g ground beef


2 medium potatoes, boiled and diced


1 small onion, finely chopped


2 garlic cloves, minced


1 cup breadcrumbs


1 egg


1/2 cup shredded cheese (optional)


6-8 slices of bacon


Salt and black pepper to taste


1 teaspoon dried thyme


1 tablespoon ketchup (optional, for topping)


Instructions:


1. Preheat the Oven: Preheat your oven to 180°C (350°F).


2. Prepare the Meatloaf Mixture: In a large bowl, combine ground beef, diced boiled potatoes, onion, garlic, breadcrumbs, egg, shredded cheese (if using), salt, black pepper, and thyme. Mix until well combined.


3. Assemble the Meatloaf: Line a loaf pan with bacon slices, letting them hang over the edges slightly. Pack the meat mixture into the pan, pressing down firmly. Fold the bacon slices over the top to cover the meatloaf. Optionally, spread ketchup on top.


4. Bake: Place the meatloaf in the oven and bake for 50-60 minutes, or until fully cooked through and the bacon is crispy.


5. Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. Garnish with fresh thyme or parsley and serve warm.
