Ham and Cheese Croquettes


Ingredients:

For the Filling:


2 tablespoons unsalted butter


2 tablespoons all-purpose flour


1 cup milk


1/2 cup diced ham


1/2 cup shredded mozzarella or cheddar cheese


1/2 teaspoon black pepper


1/4 teaspoon nutmeg (optional)

For Coating:


1 cup all-purpose flour


2 large eggs, beaten


1 1/2 cups breadcrumbs


Vegetable oil for frying

For Garnish:


Fresh parsley, finely chopped

Instructions:


1. Prepare the Filling: In a saucepan, melt butter over medium heat. Stir in the flour and cook for 1 minute. Gradually add milk, whisking constantly to avoid lumps. Cook until the mixture thickens. Remove from heat and stir in the diced ham, shredded cheese, black pepper, and nutmeg if using. Let the mixture cool completely, then refrigerate for at least 1 hour until firm.


2. Shape the Croquettes: Using your hands, take small portions of the chilled filling and shape them into oval or cylindrical croquettes. Place them on a baking sheet lined with parchment paper.


3. Coat the Croquettes: Roll each croquette in flour, then dip into the beaten eggs, and finally coat with breadcrumbs. Ensure they are fully covered.


4. Fry the Croquettes: Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the croquettes in batches for 3-4 minutes or until golden brown and crispy. Remove and drain on a paper towel-lined plate.


5. Garnish and Serve: Transfer the croquettes to a serving plate, garnish with fresh parsley, and serve warm.
