 Grilled Lamb Chops with Shrimp, Mashed Potatoes, Asparagus, and Mac and Cheese



Ingredients:

For the Lamb Chops:


8 lamb chops (frenched)

3 tbsp olive oil

2 tsp garlic powder

1 tsp smoked paprika

1 tsp rosemary, finely chopped

Salt and black pepper to taste

For the Shrimp:


1 lb large shrimp, peeled and deveined

1 tbsp olive oil

1 tsp smoked paprika

1/2 tsp cayenne pepper (optional)

Salt and black pepper to taste

For the Mashed Potatoes:


4 large potatoes, peeled and cubed

1/2 cup butter

1/2 cup milk or heavy cream

Salt and black pepper to taste

For the Asparagus:


1 bunch of asparagus, trimmed

1 tbsp olive oil

Salt and black pepper to taste

For the Mac and Cheese:


2 cups cooked elbow macaroni

2 tbsp butter

2 tbsp all-purpose flour

1 cup milk

1 cup shredded cheddar cheese

Salt and black pepper to taste

Instructions:

Lamb Chops:


Rub lamb chops with olive oil, garlic powder, smoked paprika, rosemary, salt, and pepper. Let marinate for 30 minutes.

Preheat grill to medium-high heat. Cook chops for 3-4 minutes per side for medium-rare or adjust to preferred doneness.

Let rest for 5 minutes before serving.

Shrimp:


Toss shrimp with olive oil, smoked paprika, cayenne pepper, salt, and pepper.

Grill or sauté shrimp for 2 minutes per side until pink and cooked through.

Mashed Potatoes:


Boil potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

Mash potatoes with butter, milk, salt, and pepper until smooth.

Asparagus:


Toss asparagus with olive oil, salt, and pepper.

Grill or roast in a 400°F (200°C) oven for 8-10 minutes until tender-crisp.

Mac and Cheese:


In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.

Gradually add milk, stirring constantly until thickened. Reduce heat and stir in cheese until melted.

Mix cheese sauce with cooked macaroni. Season with salt and pepper.

To Serve:


Plate lamb chops over mashed potatoes.

Arrange shrimp and asparagus on the side.

Serve mac and cheese in a ramekin on the plate.
