Grilled Beef and Tomato Rice Stack
Ingredients:
1 lb flank steak or your choice of grilled beef (sliced thinly against the grain)
2 cups cooked rice (white, brown, or jasmine)
1 cup cherry tomatoes, halved
1 medium onion, thinly sliced
1/2 cup shredded mozzarella or cheddar cheese (optional)
2 tbsp olive oil
1 tbsp balsamic vinegar (optional)
1 tsp dried oregano
1 tsp garlic powder
Salt and pepper, to taste
Fresh basil or parsley, chopped (for garnish)
Preparation:
Grill the beef:
Preheat the grill or grill pan to medium-high heat. Season the flank steak with salt, pepper, garlic powder, and a drizzle of olive oil. Grill for 4-6 minutes per side or until desired doneness is reached. Let the beef rest for a few minutes before slicing it thinly against the grain.
Prepare the tomatoes and onions:
In a small bowl, toss the halved cherry tomatoes and thinly sliced onions with olive oil, balsamic vinegar (if using), oregano, salt, and pepper. Let them marinate for a few minutes.
Assemble the rice stack:
In serving glasses, small bowls, or plates, layer the ingredients in the following order:
Start with a layer of cooked rice.
Add a layer of sliced grilled beef.
Top with a spoonful of marinated tomatoes and onions.
Repeat layers until the container is filled.
Optional cheese topping:
If using cheese, sprinkle shredded mozzarella or cheddar on top of the rice stack and lightly broil for 2-3 minutes until the cheese melts and bubbles.
Serve:
Garnish with fresh basil or parsley. Serve warm, either as a main dish or as part of a larger meal.
