This soft, airy cloud bread is made with cottage cheese for a light, fluffy texture and is perfect for anyone looking for a low-carb, gluten-free alternative to regular bread. It's great for sandwiches or as a side with your favorite meals!


Ingredients:

3 large eggs, separated 🥚

1/2 cup cottage cheese, blended until smooth 🧀

1/4 teaspoon cream of tartar 🍋

1/2 teaspoon salt 🧂

1 tablespoon cornstarch or arrowroot powder (optional, for structure) 🌽

1 teaspoon honey or a pinch of sweetener (optional, for a hint of sweetness) 🍯

Instructions:

Preheat the Oven:


Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat.

Prepare the Egg Whites:


Separate the egg yolks from the egg whites. Place the egg whites into a clean mixing bowl.

Add the cream of tartar to the egg whites and beat them with an electric mixer or whisk until stiff peaks form.

Mix the Egg Yolks and Cottage Cheese:


In a separate bowl, whisk together the egg yolks, blended cottage cheese, salt, cornstarch (if using), and honey or sweetener (if desired) until smooth and fully combined.

Fold the Mixture:


Gently fold the egg yolk mixture into the whipped egg whites using a spatula. Be careful not to deflate the egg whites; you want to maintain the light and airy texture.

Form the Cloud Bread:


Spoon the mixture onto the prepared baking sheet in small rounds or mounds, about 3-4 inches in diameter. You should get around 6-8 pieces depending on the size.

Bake:


Bake for 25-30 minutes, or until the cloud bread is golden brown on top and firm to the touch.

Cool and Serve:


Let the cloud bread cool for a few minutes before carefully removing it from the parchment paper. Serve immediately or store in an airtight container for up to a few days.
