Crispy Butter Chicken
Ingredients:
4 boneless, skinless chicken thighs or breasts
1 cup (120g) all-purpose flour
2 large eggs, beaten
1 cup (120g) breadcrumbs
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup (60g) unsalted butter, melted
2 tablespoons vegetable oil
Instructions:
Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare Breading Station: Set up three bowls—one with flour, one with beaten eggs, and one with breadcrumbs mixed with garlic powder, paprika, salt, and pepper.
Bread the Chicken: Coat each piece of chicken in flour, dip in the beaten eggs, and press into the breadcrumb mixture until evenly coated.
Pan-Fry for Crispiness: Heat vegetable oil in a skillet over medium heat. Sear each piece of chicken for 2–3 minutes per side until golden brown.
Bake: Transfer the seared chicken to the prepared baking sheet. Brush with melted butter. Bake for 15–20 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F/74°C).
Serve: Let rest for 5 minutes before serving. Enjoy your crispy butter chicken with your favorite sides!
