 Roasted potato salad with broccoli 🥦 



Ingredients:


4 large potatoes (cubed)

5 tbsp. Nola Original Mayonnaise

1 tbsp. whole grain mustard

1 tsp. honey

5 streaky bacon rashers (fried)

½ red onion (diced)

1 tbsp. parsley (chopped)

2 sprigs green onion (chopped)

300g broccoli florets (chopped)

2 boiled eggs

1 tbsp. olive oil

Seasoning, salt & pepper

Method:

1️⃣ Toss cubed potatoes in olive oil, seasoning, salt & pepper. Roast at 180°C for 20 mins or until tender. Cool.

2️⃣ Combine Nola Mayonnaise, mustard, honey, spring onion & parsley for the dressing.

3️⃣ Mix cooled potatoes, dressing, bacon, broccoli, eggs & red onion in a bowl. Refrigerate.

4️⃣ Adjust seasoning to taste & serve!
