Ingredients:


1 large head of cauliflower


3 tablespoons olive oil


1 teaspoon smoked paprika


1 teaspoon garlic powder


1/2 teaspoon ground cumin


Salt and black pepper, to taste


Tahini Dressing:


1/4 cup tahini


2 tablespoons lemon juice


1 clove garlic, minced


2 tablespoons water (add more for desired consistency)


1 tablespoon olive oil


Salt and pepper, to taste


Optional Garnishes:


Pomegranate seeds


Chopped fresh parsley


Toasted pine nuts

Instructions:


1. Prepare the Cauliflower Steaks:


Preheat your oven to 425°F (220°C).


Remove the leaves from the cauliflower and trim the stem slightly, keeping the head intact.


Slice the cauliflower into 1-inch thick steaks. You should get about 2-3 full steaks; the smaller florets can be roasted separately.


2. Season and Roast:


Place the cauliflower steaks on a parchment-lined baking sheet.


In a small bowl, mix olive oil, smoked paprika, garlic powder, cumin, salt, and pepper.


Brush the mixture generously on both sides of the cauliflower steaks.


Roast in the oven for 20-25 minutes, flipping halfway through, until the cauliflower is golden and tender.


3. Make the Tahini Dressing:


In a small bowl, whisk together tahini, lemon juice, minced garlic, olive oil, and water. Adjust the water for desired consistency. Season with salt and pepper to taste.


4. Serve:


Drizzle the tahini dressing over the roasted cauliflower steaks.


Garnish with pomegranate seeds, chopped parsley, and toasted pine nuts for added texture and flavor.
