Ingredients:

For the Cookie Dough:


2½ cups all-purpose flour

½ tsp baking powder

¼ tsp salt

1 cup unsalted butter (softened)

¾ cup granulated sugar

1 large egg

1 tsp vanilla extract

For the Raspberry Filling:


½ cup raspberry jam (seedless if preferred)

1 tbsp cornstarch

1 tbsp water

Instructions:

1️⃣ Make the Dough:

In a bowl, whisk together flour, baking powder, and salt. In a separate bowl, cream butter and sugar until fluffy. Add the egg and vanilla extract, mixing until smooth. Gradually add the dry ingredients, mixing until just combined. Divide the dough in half, wrap in plastic, and chill for 1 hour.


2️⃣ Prepare the Raspberry Filling:

In a small saucepan, combine raspberry jam, cornstarch, and water. Cook over low heat until thickened. Let cool completely.


3️⃣ Roll and Fill the Dough:

Roll one half of the dough into a rectangle (about ¼ inch thick). Spread a thin layer of raspberry filling over the surface. Roll the dough tightly into a log. Repeat with the second half of the dough. Chill the logs for at least 30 minutes.


4️⃣ Slice and Bake:

Preheat oven to 350°F (175°C). Slice the logs into ¼-inch rounds and place on a parchment-lined baking sheet. Bake for 10-12 minutes, or until the edges are just lightly golden.


5️⃣ Cool and Serve:

Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack. Enjoy with tea, coffee, or as a sweet snack!
