 Miso Butter Salmon with Sizzled Scallion Salsa Verde



Ingredients:

- 4 salmon fillets (about 6 oz each)  

- 3 tbsp miso paste  

- 2 tbsp unsalted butter, softened  

- 1 tbsp soy sauce  

- 1 tbsp honey  

- 2 tbsp olive oil  

- 4 scallions, chopped  

- 1/4 cup fresh parsley, chopped  

- 1/4 cup fresh cilantro, chopped  

- 1 tbsp lemon juice  

- Salt and pepper to taste  


Directions:

1. Preheat your oven to 400°F (200°C).  

2. In a small bowl, mix the miso paste, softened butter, soy sauce, and honey until smooth.  

3. Place the salmon fillets on a baking sheet lined with parchment paper. Spread the miso butter mixture evenly on top of each fillet.  

4. Bake the salmon in the preheated oven for about 12-15 minutes, or until the fish flakes easily with a fork.  

5. While the salmon is baking, heat olive oil in a small pan over medium heat. Add the chopped scallions and sauté for about 2 minutes until they are soft and slightly crispy.  

6. In a bowl, combine the sautéed scallions, parsley, cilantro, and lemon juice. Season with salt and pepper to taste.  

7. Once the salmon is done, remove it from the oven and let it rest for a minute.  

8. Serve the salmon topped with the sizzled scallion salsa verde.
