 Honey Lime Chicken Skewers



Ingredients:

• 1.5 lbs chicken breast or thighs, cut into 1-inch cubes

• 3 tablespoons honey

• 2 tablespoons fresh lime juice (about 1 lime)

• 1 tablespoon lime zest

• 2 tablespoons soy sauce

• 2 tablespoons olive oil

• 3 garlic cloves, minced

• 1/2 teaspoon ground cumin

• 1/2 teaspoon smoked paprika

• 1/4 teaspoon black pepper

• 1/4 teaspoon red chili flakes (optional)

• Wooden skewers, soaked in water for 20 minutes (if grilling)


Instructions:

1. Prepare the Marinade:

In a large bowl, whisk together honey, lime juice, lime zest, soy sauce, olive oil, minced garlic, cumin, smoked paprika, black pepper, and chili flakes (if using).

2. Marinate the Chicken:

Add the chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

3. Assemble the Skewers:

Thread the marinated chicken onto the soaked wooden skewers, leaving a little space between each piece for even cooking.

4. Cook the Skewers:

o Grill Method: Preheat your grill to medium-high heat. Cook the skewers for 10-12 minutes, turning every 2-3 minutes, until the chicken is cooked through and has a slight char.

o Oven Method: Preheat your oven to 425°F (220°C). Place the skewers on a baking sheet lined with foil or a wire rack. Bake for 15-20 minutes, turning once, until fully cooked. For extra caramelization, broil for 2-3 minutes at the end.

o Stovetop Method: Heat a grill pan over medium-high heat. Cook the skewers for 10-12 minutes, turning occasionally, until golden brown and cooked through.

5. Serve:

Serve the skewers warm, garnished with lime wedges and fresh cilantro, if desired. Pair with rice, salad, or a side of grilled vegetables for a complete meal.
