Ingredients
Lamb Chops:
8 lamb chops
3 tbsp olive oil
3 cloves garlic, minced
1 tbsp fresh rosemary, chopped
1 tsp thyme
1 tsp paprika
1/2 tsp cumin
Salt and pepper, to taste
Juice of 1 lemon
Mediterranean Rice:
1 cup basmati or jasmine rice
2 tbsp olive oil
2 cloves garlic, minced
2 cups chicken or vegetable broth
1/4 cup fresh parsley, chopped
Zest of 1 lemon
Salt and pepper, to taste
Greek Salad:
2 cups mixed greens
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/4 cup red onion, thinly sliced
1/4 cup Kalamata olives
1/4 cup feta cheese, crumbled
Dressing:
3 tbsp olive oil
1 tbsp red wine vinegar
1 tsp Dijon mustard
1 clove garlic, minced
Salt and pepper, to taste
Instructions
Prepare the Lamb Chops:
In a bowl, combine olive oil, garlic, rosemary, thyme, paprika, cumin, salt, pepper, and lemon juice.
Rub the marinade over the lamb chops and let them marinate for at least 30 minutes or up to 2 hours.
Preheat a grill or grill pan over medium-high heat. Cook the lamb chops for 3–4 minutes per side for medium-rare or longer to your desired doneness. Let rest for 5 minutes before serving.
Prepare the Mediterranean Rice:
Rinse the rice under cold water until the water runs clear.
Heat olive oil in a medium saucepan over medium heat. Add garlic and sauté until fragrant.
Add rice and stir to coat in the oil.
Pour in broth, bring to a boil, then reduce to a simmer. Cover and cook for 15–18 minutes or until the rice is tender and the liquid is absorbed.
Fluff the rice with a fork and stir in parsley, lemon zest, salt, and pepper.
Prepare the Greek Salad:
In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper. Drizzle over the salad and toss to combine.
Serve:
Plate the grilled lamb chops alongside the Mediterranean rice and Greek salad. Add lemon wedges for garnish, if desired.
Serve with a side of tzatziki or a dipping sauce of your choice.
