1 teaspoon freshly grated lemon zest 🍋
1 garlic clove, minced 🧄
Kosher salt and pepper to taste 🧂
For the Corn Salad:
6 ears of sweet corn, kernels cut from the cob 🌽
2 green onions, thinly sliced 🌿
1/4 cup chopped fresh cilantro 🌿
1/4 cup sour cream 🥛
2 tablespoons freshly squeezed lime juice 🍋
1 tablespoon freshly grated lime zest 🍋
Kosher salt and pepper to taste 🧂
Instructions
1️⃣ Marinate the Chicken:
Place the chicken thighs in a glass dish or resealable bag.
In a small bowl, whisk together olive oil, lemon juice, hot honey, lemon zest, garlic, salt, and pepper.
Pour the marinade over the chicken and ensure it's evenly coated. Marinate for at least 30 minutes or overnight for best flavor.
2️⃣ Grill the Chicken:
Preheat the grill to the highest setting.
Once hot, place the chicken on the grill and cook for about 5 minutes on one side, or until it easily flips.
Flip the chicken and grill for another 5–6 minutes, or until the internal temperature reaches 165°F (74°C).
Let the chicken rest for 5–10 minutes before serving. Drizzle with extra hot honey.
3️⃣ Prepare the Corn Salad:
Place the corn kernels, green onions, and chopped cilantro in a medium-sized bowl.
In a smaller bowl, whisk together sour cream, lime juice, lime zest, salt, and pepper.
Stir the sour cream mixture into the corn until well combined. Taste and adjust seasoning if needed.
4️⃣ Serve:
Plate the grilled chicken alongside the lime corn salad. Drizzle more hot honey over the chicken for an extra kick. Enjoy!
