Apple Financiers

 


Ingredients:

- 75 g of almond powder

- 110 g of sugar - 60 g of flour

- 4 egg whites at room temperature

- 125 g of unsalted butter

- 1/2 teaspoon of vanilla extract

- 2 apples

- 1 good pinch of salt

- A few flaked almonds

Preparation:

Preheat the oven to 180 ° C (fan-assisted).

Generously butter the inside of the tartlet or muffin molds with soft, unmelted butter, making sure to butter the edges of the molds (if you use silicone molds this is not necessary).

Melt the butter over low heat until it no longer sings and has a nutty smell and a golden color. Stop cooking by transferring it to a bowl. Leave to cool.

 In a bowl, mix the almond powder, sugar, flour and salt. Incorporate the egg whites beaten into a foam (not snow) and the vanilla extract. Add the hazelnut butter.

Fill each mold indentation. Arrange the apple slices, pressing them in slightly, then sprinkle with flaked almonds and bake for 20 to 25 minutes, until golden brown. Let the financiers cool before unmolding.
