I make these every year, they're delicious.
Peppermint Puffs
Ingredients:
2 cups of all-purpose flour
1/4 teaspoon of salt
One stick of unsalted butter, at room temperature
1 Cup of confectioner's sugar
1 egg
1/2 teaspoon peppermint extract
1/2 teaspoon of vanilla extract
8 ounces white chocolate, melted with
1 teaspoon Shortening
1/2 cup finely chopped candy canes
Directions:
1. Stir together flour and salt in a medium-sized bowl
2. Beat butter and sugar in a large bowl until smooth and creamy. Beat in egg and extracts.
3. On low speed, beat in flour mixture. Shape dough into a ball; wrap in plastic wrap. Refrigerate 1 hour.
4. Heat oven to 375. Coat baking sheets with nonstick cooking spray.
5. Shape dough into 1-inch balls for a total of 36 cookies; place on prepared baking sheets.
6. Bake at 375 for 10 to 12 minutes or until bottoms are lightly browned.
Transfer cookies to wire racks to cool completely. When cool, brush with melted chocolate; dip in candy canes. Let harden on wax paper.
I actually dip them in the chocolate,
but I don't dip them in the candy canes, I sprinkle them on.
