1 tbsp tbsp chopped chervil

How to Prepare Savory Sweet Potato Pancakes with Mozzarella and Hazelnut Sauce:


Step by Step:


Prepare the sweet potato puree:


Cook the sweet potatoes in a saucepan of boiling water until very tender (about 15-20 minutes).


Drain, peel and mash them with a potato masher or fork to obtain a smooth puree.


Prepare the pancake batter:


In a large bowl, mix the sweet potato puree with the melted butter.


Add the sifted flour, eggs, grated parmesan and mozzarella cut into small pieces.


 Season with salt and pepper, then mix until smooth.


Cooking the pancakes:


Heat a non-stick frying pan with a drizzle of olive oil or a knob of butter.


Place a ladleful of batter in the frying pan to form pancakes about 10 cm in diameter.


Cook over medium heat for 2 to 3 minutes on each side, until golden brown.

Roast the hazelnuts in a preheated oven at 180°C for 8 to 10 minutes, until lightly golden brown.


Let them cool, then roughly crush them.
