Ingredients:
4 boneless, skinless chicken breasts
Salt and pepper, to taste
4 oz brie cheese, sliced
1/2 cup fresh spinach leaves
1/4 cup cranberry sauce
1 tbsp olive oil
Fresh rosemary sprigs for garnish (optional)
Instructions:
Prepare the Chicken Breasts:
Preheat oven to 375°F (190°C).
Slice a pocket into each chicken breast, being careful not to cut all the way through. Season with salt and pepper.
Stuff the Chicken:
In each pocket, place a few spinach leaves, a slice or two of brie, and a spoonful of cranberry sauce.
Sear and Bake:
