Chicken Broccoli Rice Casserole
Ingredients:
2 cups cooked chicken, shredded or cubed
1 cup uncooked long-grain white rice
2 1/2 cups chicken broth
1 can (10.5 oz) cream of chicken soup
1 1/2 cups broccoli florets (fresh or frozen)
1 1/2 cups shredded cheddar cheese, divided
1/2 cup milk
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper, to taste
1/4 cup grated Parmesan cheese (optional)
Instructions:
Prepare the Oven:
Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.
Combine Ingredients:
In a large mixing bowl, combine the uncooked rice, chicken broth, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper. Stir in the broccoli florets, shredded chicken, and 1 cup of the shredded cheddar cheese.
Transfer to Baking Dish:
Pour the mixture into the prepared baking dish. Spread evenly and cover tightly with aluminum foil.
Bake:
Bake in the preheated oven for 45-50 minutes, or until the rice is tender and the liquid is mostly absorbed.
Add Cheese and Finish Baking:
Remove the foil, sprinkle the remaining cheddar cheese and Parmesan cheese (if using) on top, and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
Serve:
Let the casserole cool slightly before serving. Enjoy as a warm, comforting meal!
