Ribeye Steak with Caramelized Onions and Mashed Potatoes 🥩🧅🥔
Ingredients:
For the Ribeye Steak:
2 ribeye steaks (about 1-inch thick)
2 tablespoons olive oil
2 tablespoons butter
Salt and pepper, to taste
1 teaspoon garlic powder (optional)
1 teaspoon fresh rosemary or thyme (optional)
For the Caramelized Onions:
2 large onions, thinly sliced
2 tablespoons butter
1 tablespoon olive oil
Salt, to taste
1 teaspoon sugar (optional, to enhance caramelization)
1 tablespoon balsamic vinegar (optional, for added flavor)
For the Mashed Potatoes:
2 lbs potatoes (Yukon Gold or Russet)
1/2 cup milk (or cream, for richer flavor)
1/4 cup butter
Salt and pepper, to taste
1/4 cup sour cream (optional, for creaminess)
Instructions:
1. Prepare the Mashed Potatoes:
Boil Potatoes: Peel and cut the potatoes into even chunks. Place them in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.
Mash: Drain the potatoes and return them to the pot. Add the butter, milk, and sour cream (if using). Mash until smooth and creamy. Season with salt and pepper to taste. Keep warm.
2. Caramelize the Onions:
Heat Oil and Butter: In a large skillet, heat the olive oil and butter over medium heat.
Cook Onions: Add the sliced onions and a pinch of salt. Cook for 20-30 minutes, stirring occasionally, until the onions are golden brown and caramelized. If desired, add sugar to help the onions caramelize.
Add Balsamic (optional): Stir in the balsamic vinegar during the last few minutes of cooking for extra flavor. Remove from heat and set aside.
3. Cook the Ribeye Steaks:
Prepare the Steaks: Pat the steaks dry with paper towels. Season both sides with salt, pepper, garlic powder, and herbs (if using).
Heat Skillet: In the same skillet used for the onions, increase the heat to medium-high and add a bit more olive oil if needed.
Sear the Steaks: Add the steaks and cook for 4-5 minutes on one side until a nice crust forms. Flip and cook for another 3-4 minutes for medium-rare (adjust time based on your desired doneness).
Add Butter: In the last minute of cooking, add the butter and spoon the melted butter over the steaks for extra flavor.
4. Serve:
Plate the Dish: Place a generous scoop of mashed potatoes on each plate. Top with a ribeye steak and a portion of caramelized onions.
Garnish: Optionally, garnish with fresh herbs or a sprinkle of additional salt.
This Ribeye Steak with Caramelized Onions and Mashed Potatoes is a classic and satisfying meal that's perfect for a special occasion or a comforting dinner at home. Enjoy! 🥩🧅🥔✨
