Rainbow Veggie Bowl 🥗
Ingredients:
🍅 1 cup cherry tomatoes, halved
🥑 1 avocado, sliced
🥚 2 hard-boiled eggs, sliced
🧅 1/4 cup red onion, diced
🌽 1/2 cup corn kernels
🥗 Fresh cilantro, chopped
🌶️ Paprika, for sprinkling
🧀 Crumbled feta cheese (optional)
🥬 Fresh mixed greens (optional)
Instructions:
Prepare the Ingredients:
Halve the cherry tomatoes.
Slice the avocado and hard-boiled eggs.
Dice the red onion.
If using canned corn, rinse and drain it.
Arrange the Bowl:
Start with a base of fresh mixed greens if desired.
Arrange the cherry tomatoes, avocado slices, hard-boiled egg slices, diced red onion, and corn kernels in sections on top of the greens or directly in the bowl.
Garnish:
Sprinkle chopped fresh cilantro over the bowl.
Add a light sprinkle of paprika for a touch of color and flavor.
Optionally, sprinkle crumbled feta cheese over the top.
