Ingredients:

For the Crust:


1 1/2 cups graham cracker crumbs

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the Cheesecake Filling:


24 oz (3 packages) cream cheese, softened

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

1 cup sour cream

For the Pineapple Topping:


1 can (20 oz) crushed pineapple, drained well

1/2 cup granulated sugar

1 tbsp cornstarch

1/4 cup water

1 tsp lemon juice

For the Whipped Cream (optional):


1 cup heavy cream

2 tbsp powdered sugar

1/2 tsp vanilla extract

Instructions:

Make the Crust:


Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.


In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined.


Press the mixture evenly into the bottom of the prepared springform pan. Bake for 10 minutes. Remove from the oven and let it cool while preparing the filling.


Make the Cheesecake Filling:


In a large bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.


Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and sour cream until well combined.


Pour the cheesecake batter over the cooled crust in the springform pan. Smooth the top with a spatula.


Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.
