Lobster Bisque 🦞🥄

Ingredients
2 lobster tails, cooked and chopped
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
2 celery stalks, chopped
1 carrot, chopped
1/4 cup tomato paste
1 teaspoon paprika
4 cups seafood stock
1 cup heavy cream
1/4 cup sherry (optional)
Salt and pepper, to taste
Fresh chives, for garnish
Instructions
Sauté the Vegetables:
In a large pot, heat olive oil over medium heat. Add onion, garlic, celery, and carrot. Sauté until softened, about 5-7 minutes.
Add Tomato Paste and Spices:
Stir in the tomato paste and paprika, cooking for another 2 minutes.
Add Stock and Simmer:
Pour in the seafood stock and bring to a simmer. Cook for about 15 minutes.
Blend the Soup:
Using an immersion blender, puree the soup until smooth. Stir in heavy cream and sherry (if using), then add the chopped lobster meat. Season with salt and pepper.
Serve:
Ladle the bisque into bowls and garnish with fresh chives. Enjoy your rich and creamy Lobster Bisque!
