Homemade Taco Egg Rolls 🌮🥚🍴
These Taco Egg Rolls are the perfect fusion of Mexican and Asian flavors, featuring a crispy egg roll shell filled with seasoned taco meat, cheese, and veggies. They make a great appetizer or fun dinner option for the whole family!
Ingredients:
For the Filling:
1 lb ground beef (or ground turkey)
1 packet taco seasoning mix
1 cup shredded cheddar cheese (or Mexican blend)
1 cup shredded lettuce
1 medium tomato, diced
1 small onion, diced
1/4 cup sour cream (optional)
12-15 egg roll wrappers
Vegetable oil for frying

Instructions:
1. Cook the Taco Meat:
In a large skillet over medium-high heat, cook the ground beef until browned, breaking it apart with a spatula (about 7-8 minutes). Drain excess fat.
Add the taco seasoning mix and 1/4 cup of water to the beef. Stir well and cook for another 2-3 minutes until the seasoning is well mixed and the meat is fully cooked. Remove from heat and let cool slightly.
2. Assemble the Egg Rolls:
Lay out an egg roll wrapper on a clean surface, with one corner pointing toward you (diamond shape).
Spoon about 2 tablespoons of the taco meat mixture into the center of the wrapper. Add a sprinkle of shredded cheese, lettuce, diced tomatoes, and onions. You can also add a small dollop of sour cream if you like.
Fold the bottom corner over the filling, then fold in the sides, and roll it up tightly, brushing the edges with a little water to seal the egg roll.
3. Fry the Egg Rolls:
Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
Fry the egg rolls in batches, 3-4 at a time, for 3-4 minutes or until they are golden brown and crispy. Flip them halfway through cooking to ensure even browning.
Remove the egg rolls from the oil and place them on a plate lined with paper towels to drain excess oil.
4. Serve:
Serve the crispy taco egg rolls hot with salsa, guacamole, and sour cream for dipping.
