Hearty Crock Pot Cowboy Soup
Ingredients:
1 lb ground beef (or turkey)
1 medium onion, diced
2 cloves garlic, minced
1 can (15 oz) black beans, rinsed and drained
1 can (15 oz) kidney beans, rinsed and drained
1 can (15 oz) corn, drained
1 can (14.5 oz) diced tomatoes (with juice)
1 can (6 oz) tomato paste
2 cups beef broth (or chicken broth)
1 tbsp chili powder
1 tsp cumin
1 tsp paprika
1/2 tsp oregano
Salt and pepper, to taste
1 cup bell peppers, diced (any color)
1 cup frozen diced potatoes or fresh diced potatoes
Optional toppings: shredded cheese, sour cream, sliced green onions, or chopped cilantro
Instructions:
Brown the Meat:
In a skillet over medium heat, brown the ground beef (or turkey) along with the diced onion and minced garlic until the meat is cooked through. Drain any excess fat.
Combine Ingredients:
In the crock pot, combine the browned meat mixture, black beans, kidney beans, corn, diced tomatoes, tomato paste, beef broth, chili powder, cumin, paprika, oregano, salt, pepper, bell peppers, and potatoes.
Cook the Soup:
Stir well to combine all ingredients. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the potatoes are tender and the flavors meld together.
Serve:
Taste and adjust the seasoning if necessary. Serve hot, garnished with your choice of toppings like shredded cheese, sour cream, sliced green onions, or chopped cilantro.
