Ingredients:

- 1 cup unsalted butter, softened

- 1 cup granulated sugar

- 3 cups all-purpose flour

- 1 teaspoon baking powder

- 1/2 teaspoon salt

- 1 large egg

- 1 teaspoon vanilla extract

- Food coloring (red and green)

- 1/4 cup powdered sugar (for dusting)


Instructions:

1. In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy. This should take about 3-4 minutes.

   

2. Beat in the egg and vanilla extract, mixing until fully incorporated.


3. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this mixture to the wet ingredients, mixing until a soft dough forms.


4. Divide the dough into two equal portions. In one portion, add a few drops of red food coloring and mix until you achieve a bright red color. In the other portion, add green food coloring and mix until you reach a vibrant green.


5. Lay out a sheet of parchment paper and place the red dough on top. Place another sheet of parchment paper on top of the red dough and roll it out into a rectangle about 1/4 inch thick.


6. Repeat the rolling process for the green dough, making sure it's the same size as the red rectangle.


7. Once both doughs are rolled out, carefully peel the top layers of parchment off each and place the green dough on top of the red dough. Gently press down to adhere.


8. Starting from one edge, roll the dough tightly into a log, using the parchment paper to help keep it tight. Wrap the log in the parchment and refrigerate for at least 2 hours or until firm.


9. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.


10. Once the dough is firm, remove it from the refrigerator and slice it into 1/4-inch thick rounds. Place the cookies onto the prepared baking sheet, spacing them about 2 inches apart.


11. Bake in the preheated oven for about 10-12 minutes or until the edges start to turn golden. Be careful not to overbake; they should remain soft in the center.


12. Allow the cookies to cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely. Dust with powdered sugar before serving.
