Chicken Avocado Ranch Burritos 🌯
Ingredients
2 large flour tortillas
1 lb chicken breast, cooked and diced
1 tbsp olive oil
1 tsp chili powder
1/2 tsp cumin
Salt and black pepper, to taste
1 avocado, sliced or mashed
1/2 cup shredded cheddar or Monterey Jack cheese
1/2 cup diced tomatoes
1/4 cup diced red onion
1/4 cup chopped lettuce
1/4 cup ranch dressing
Fresh cilantro, chopped (for garnish)
Directions
Season and Cook Chicken: In a skillet, heat olive oil over medium heat. Season chicken with chili powder, cumin, salt, and black pepper. Cook until golden and cooked through, about 5-6 minutes. Remove from heat and let cool slightly, then dice.
Assemble Burritos: Lay out tortillas and spread a layer of mashed avocado in the center of each. Top with diced chicken, shredded cheese, tomatoes, red onion, lettuce, and a drizzle of ranch dressing.
Fold and Grill: Fold in the sides and roll up the tortilla tightly around the fillings. Optionally, grill each burrito in a skillet over medium heat for 1-2 minutes per side to make them crispy and warm.
Serve: Slice in half, garnish with fresh cilantro, and serve with extra ranch dressing if desired.
