Chicken and Broccoli Penne Pasta 🍗🥦🍝
Ingredients 🛒
12 oz (340g) penne pasta
1 lb (450g) chicken breasts, cut into bite-sized pieces
3 cups broccoli florets
4 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 cup heavy cream or half-and-half
1/2 cup chicken broth
2 tbsp olive oil
1 tbsp butter
1 tsp Italian seasoning
Salt and pepper, to taste
Red pepper flakes (optional)
Fresh parsley, chopped, for garnish

Cook the Pasta & Broccoli:
Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package directions. In the last 3 minutes of cooking, add the broccoli florets to the pasta water.
Drain pasta and broccoli and set aside.
Cook the Chicken:
In a large skillet, heat olive oil and butter over medium heat. Add the chicken pieces, season with salt, pepper, and Italian seasoning, and cook until golden and fully cooked, about 6-7 minutes. Remove the chicken from the skillet and set aside.
Make the Sauce:
In the same skillet, add the minced garlic and cook until fragrant, about 30 seconds.
Stir in the chicken broth and heavy cream. Bring to a simmer and cook until the sauce thickens slightly, about 5 minutes. Stir in the Parmesan cheese and season with salt, pepper, and red pepper flakes (if using).
Combine Everything:
Add the cooked pasta, broccoli, and chicken to the skillet. Toss everything together until well coated in the creamy sauce. Heat through for 2-3 minutes.
Serve:
Garnish with fresh parsley and extra Parmesan if desired. Serve hot and enjoy your comforting chicken and broccoli penne pasta!
