🧀 Cheesy Tater Tot Meatloaf Casserole 🍖
Ingredients:
1 cup ketchup
1 cup Sweet Baby Ray’s Hickory & Brown Sugar BBQ sauce
2 lbs lean ground beef
30 Ritz crackers, crushed finely
2 oz Lipton onion soup mix
2 large eggs
24 oz frozen tater tots
2 cups blend of shredded mozzarella and cheddar cheese
1/4 cup real bacon bits
Instructions:
Preheat Oven: Set your oven to 350°F (177°C).
Sauce Preparation: In a small bowl, whisk together the ketchup and BBQ sauce until smooth. Reserve.
Meat Mixture: In a larger bowl, blend the ground beef with the crushed crackers, onion soup mix, eggs, and half a cup of the prepared sauce. Use your hands to ensure the mixture is well combined.
Assemble the Meatloaf: Transfer the beef mixture to a greased 9 x 13-inch baking dish, pressing it flat. Drizzle with the remaining sauce.
Add Tater Tots and Toppings: Layer frozen tater tots evenly over the sauce. Sprinkle evenly with the cheese blend and bacon bits.
Bake Covered: Cover the dish with aluminum foil and bake for 35 minutes. Remove the foil and continue to bake for an additional 40 minutes, or until the meat is fully cooked.
Rest and Serve: Let the casserole stand for a few minutes after baking before slicing. Serve hot and enjoy!
