To make them, this filling is placed inside an egg roll wrapper, which is then rolled up and sealed. The rolls are deep-fried until the outside is crispy and golden brown. Once cooked, they’re often dusted with powdered sugar or cinnamon sugar for added sweetness. Ingredients:


2 cups apples, peeled, cored, and diced (Granny Smith or Honeycrisp work well)

½ cup brown sugar, packed

1 tsp cinnamon

½ tsp nutmeg

1 tbsp lemon juice

1 tbsp cornstarch

10 egg roll wrappers

Vegetable oil (for frying)

Powdered sugar (for dusting)

Caramel sauce (for drizzling, optional)

Instructions:


Prepare the Apple Filling:


In a large bowl, combine the diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix until the apples are well coated. Let it sit for about 10 minutes to allow the flavors to meld.


Assemble the Egg Rolls:


Place an egg roll wrapper on a clean surface, with one corner facing you. Spoon 2 tablespoons of the apple mixture onto the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Use a bit of water on the edges to help seal them. Repeat with the remaining wrappers and filling.


Heat the Oil:


In a deep skillet or frying pan, heat about 2 inches of vegetable oil over medium heat until it reaches 350°F (175°C).


Fry the Egg Rolls:


Carefully place the egg rolls in the hot oil, a few at a time, and fry for about 3-4 minutes on each side or until golden brown. Use tongs to turn them as needed. Remove and drain on paper towels.


Dust and Serve:


Once the egg rolls are cool enough to handle, dust them with powdered sugar. Drizzle with caramel sauce if desired.
