Shrimp Alfredo with Broccoli and Homemade Garlic Bread
Ingredients:
- 200 grams of shrimp, peeled and deveined
- 200 grams of broccoli florets
- 250 grams of fettuccine pasta
- 2 tablespoons olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and black pepper to taste
- 1/4 teaspoon red pepper flakes (optional for a little kick)
- Fresh parsley for garnish
For the Homemade Garlic Bread:
- 1 French baguette
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 1 teaspoon dried parsley
Instructions:
1. Begin by boiling a large pot of salted water and cook the fettuccine pasta according to package instructions. Add the broccoli florets during the last 2-3 minutes of cooking. Drain both and set aside.
2. In a large skillet, heat the olive oil and butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
3. Add the shrimp to the skillet and cook for about 2-3 minutes until they turn pink and opaque.
4. Pour in the heavy cream, stirring well, and then add the grated Parmesan cheese. Cook for another 2-3 minutes until the sauce thickens slightly.
5. Season the sauce with salt, black pepper, and red pepper flakes (if using). Combine the cooked fettuccine and broccoli with the sauce, tossing everything together until well coated.
6. For the garlic bread, preheat your oven to 375°F (190°C). Mix the softened butter, minced garlic, and dried parsley in a bowl until well combined. Spread the mixture evenly on the French baguette.
7. Place the baguette on a baking sheet and bake for about 10-12 minutes, or until golden and crispy.
8. Serve the shrimp Alfredo hot, garnished with fresh parsley, alongside the homemade garlic bread.
Notes:
Feel free to add more veggies like spinach or bell peppers to the dish.
You can use whole wheat pasta for a healthier option.
