Pumpkin Cookies with Brown Butter Icing
Ingredients:
Pumpkin Cookies:
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar, packed
1 cup canned pumpkin puree
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/2 teaspoon salt
Brown Butter Icing:
1/2 cup unsalted butter
2 cups powdered sugar
2-3 tablespoons milk
1 teaspoon vanilla extract
Directions:
Prepare the Cookie Dough:
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add in the pumpkin puree, egg, and vanilla extract, mixing until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Bake the Cookies:
Drop spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Prepare the Brown Butter Icing:
In a small saucepan, melt the butter over medium heat. Continue cooking, stirring constantly, until the butter turns golden brown and has a nutty aroma, about 4-5 minutes. Remove from heat and let cool slightly.
In a medium bowl, whisk together the browned butter, powdered sugar, milk, and vanilla extract until smooth and creamy. If the icing is too thick, add a bit more milk, one tablespoon at a time, until desired consistency is reached.
Frost the Cookies:
Once the cookies are completely cooled, drizzle or spread the brown butter icing on top of each cookie. Allow the icing to set before serving.
