𝐄𝐩𝐢𝐜 𝐂𝐡𝐢𝐦𝐢𝐜𝐡𝐮𝐫𝐫𝐢 𝐋𝐚𝐦𝐛 𝐌𝐞𝐚𝐭𝐛𝐚𝐥𝐥 𝐏𝐢𝐭𝐚𝐬




Ingredients

Lamb Meatballs:


1 lb ground lamb

¼ cup chopped parsley

¼ cup chopped cilantro

2 tsp dried oregano

2 large garlic cloves, minced

¼ tsp salt (plus more to taste)

Black pepper

4 pita wraps

Fillings: basmati rice, sliced shallots/red onions, chimichurri, feta cheese, greens

Epic Chimichurri:


1 medium shallot, finely chopped

1 medium-large jalapeño, finely chopped

4 garlic cloves, chopped

½ cup flat-leaf parsley, chopped

⅓ cup cilantro, chopped

¾ cup olive oil

½ cup red wine vinegar

2 tsp dried oregano

½ tsp red pepper flakes

¼ tsp salt (plus more to taste)


Instructions

1️⃣ Preheat oven to 375°F and line a baking sheet with parchment paper.

2️⃣ Combine lamb, herbs, garlic, salt, and pepper in a bowl. Form meatballs and place on the baking sheet.

3️⃣ Bake meatballs for 20 minutes until slightly pink inside.

4️⃣ For chimichurri, blend all ingredients to desired consistency. Store in a lidded jar in the fridge.

5️⃣ Toast pitas and assemble with rice, shallots, meatballs, chimichurri, and feta cheese. See less
